JLT Kickstart for Health Cookbook
A healthy lifestyle requires a balance of both exercise and nutrition. With that in mind, the JLT Kickstart Cookbook was created. This compilation of easy to use, healthy and youth-focused recipes is filled with inspirational quotes and pictures to encourage JLT Kickstart participants on their journey to health.
The cookbook was launched in May 2008 and has been given to over 100 families in the community. Taste it for yourself, below is a recipe for homemade carrot soup submitted from one of our own Junior Leaguers!
Carrot Soup
1 large bag of carrots
One cube of beef bouillon (can substitute with vegetable cube or chicken, I like Beef best)
Half a chopped cooking onion
Tablespoon of butter
Chop up half an onion into small pieces and put in the bottom of a large pot with a tablespoon of butter. On medium heat,soften the onion in the butter. While the onion is cooking, peel the carrots (approximately 8 large carrots) and then cut into small round pieces. Once the onion is soft, add the carrots. Stirring periodically, cook the carrots in the pot. After ten minutes, add water and beef bouillon cube to the pot and bring to a boil. Water should just cover the carrots in the pot.
Let it cook until all carrots are soft. Check periodically to make sure you have enough water in the pot, it should just cover the carrots. Once the carrots are very soft (check with a fork and they should fall apart). Let cool for a few minutes. Then grab your blender, and in small batches, blend the hot mixture of water and carrots.
You can freeze the soup, or serve immediately. Easy to reheat and VERY healthy. Great on a cold day.
